What I'm Eating: Dinner Repeat with Goddess Salad Recipe

I am in a bit of a cooking rut so despite going grocery shopping today, I went with a meal I made last week: Split Pea and Ham Soup with my "Goddess Salad."  In my previous post, I didn't give the recipe so I'll include it this time.  The soup is Campbell's Split Pea and Ham Soup and I'm pretty obsessed.  Eventually I'm going to experiment and make my own.  But on to the salad....

    *2.5 cups Mixed Organic Baby Greens *1/2 Red Bell Pepper *1/4 Thinly Sliced Sliced Red Onion *1/3 Cucumber *1/2 Avocado *1 Vine Ripe Tomato *1/4 cup Thinly Shredded Italian Cheese *3 Tbsp Champagne Vinaigrette (Girard's)
DIRECTIONS:
Chop peppers, cucumber and tomato and finely slice red onion. Slice up the avocado and mix all vegetables together. Top with shredded cheese and then toss with champagne vinaigrette and ENJOY!
